Simple to make and very tasty. The first time I made it my husband asked me what I'd put in it to make it taste like eggs. 1 lb. extra firm or firm tofu, water packed, drained and mashed 2 Tbsp. Bill's Best Chik Nish Seasoning 1/2 can (about 3/4 cup) black olives, diced small Vegannaise to taste, about 1/2 cup Mash tofu and add the remaining ingredients. Stir to blend. (I usually add a bit more of the Bill's Best seasoning than this recipe calls for). You want this to be the consistency of egg salad. Add more Vegannaise if it is too dry. Great stuffed in lightly salted cherry tomatoes, or on Triscuits, toast, or in sandwiches. Note: This recipe does not taste good with ANY substitutions of the seasoning or the mayonnaise.
