Guest guest Posted May 11, 2005 Report Share Posted May 11, 2005 Tomato Artichoke Salad Source: Farmers Market Cookbook 1-6 z jar marinated artichoke hearts 2 tbs lemon juice 2 cloves finely chopped garlic 1/2 tsp salt 1/4 tsp pepper 3 cups cooked brown rice 3 large tomatoes,seeded diced and drained 1/2 cups chopped red onions 1-15 oz can whole black olives,drained and cut into quarters 1/4 cup chopped parsley Drain artichoke hearts,reserving marinade. Cut hearts lengthwise;reserve. Combine lemon juice,garlic,salt and pepper. Add lemon ,mixture to reserved marinade and beat together. Combine rice,artichoke hearts,tomatoes,onions,olives and parsley.
