Gluten is a generic word for a protein found in grains. Folks with CD need to avoid wheat gluten (gliadin), rye gluten (secalin), barley gluten (hordein), and many need to avoid oat gluten (avenin). Now, not all adults with CD react to avenin. That said, there are NO uncontaminated oats available at this point. there will be some from Canada in the future, but right now, oats are contaminated with wheat and rye from the field to the combine to the mill. If you've ever looked at oat groats, you'll see that they are a similar size and shape to wheatberries and ryeberries--mechanical sorting equipment really can't separate them out and there's always volunteer wheat/rye growing in oat fields. ygg Quote Link to comment Share on other sites More sharing options...

Avoid : atta flour barley bulgar club durum einkorn gluten flour kamut oat* rye semolina spelt triticale wheat wheaten cornflour *Oats are controversial. They contain a protein very similar to gluten, which may be a problem, and there is a huge risk of cross contamination in the fields. And oats (unless you get the kind which has not been milled and is still whole) are generally cross-contaminated either in the field or at the mill.
