Guest guest Posted November 19, 2004 Report Share Posted November 19, 2004 Cucumber Raitha Source: Cooking Kindly A refreshing addition to a variety of Indian dishes. 4 Tbsp. tahini mixed with 1/4 - 1/43 cup of water 1 medium suzed cucumber 3 Tbsp. fresh chopped cilantro salt to taste (pepper optional) Juice of 1 lemon 1/4 tsp. of fried cumin seeds Mix tahini with water until smooth. Peel and chop cucumber into quarters. Add cucumbers to tahini mixture along with salt, pepper, and cumin seeds. Mix well. Stir in 1/2 of the cilantro and use the other half to garnish.
