I don't know how to replace the creamy mushroom soup and the onion crisps. I don't have a specific 'new' recipe, but I found a Mushroom Soup recipe in the archives that I posted previously. Reduce the amount of liquid in the recipe or make it 'as written' and then thicken with some cornstarch. Use it for the canned mushroom soup in the recipe. Cream of Mushroom Soup 2 cups milk (cashew, soy, etc.) 2 Tbsp (6 tsp) soy flour (-OR- your choice eg. fava/garbanzo [chickpea] bean flour) 1 1/2 tsp chicken-style seasoning 1/2 tsp dry parsley flakes 1/2 tsp salt 1/8 tsp paprika one 4 oz (113 g) can mushrooms with liquid Place milk and seasonings in blender. Blend until smooth. Add mushrooms and blend briefly until mushrooms are chopped. Pour into saucepan. Cook over medium-low heat until thickened. And, here's a recipe for deep fried onion rings that could be used as the topping to replace the onion crisps: French Fried Onions *Make your own French fried onions by dipping onion pieces in milk/substitute or water and coating with Miss Roben's Bread and Batter Coating Mix; deep fry until crisp and golden. Guest guest Posted November 20, 2005 Report Share Posted November 20, 2005 I kind of fly by the seat of my pants when I cook, but here is what I did recently that I couldn't stop eating.... I took frozen whole green beans and mixed them with a rectangled container of Imagine brand Organic Creamy Potato Leek Soup (my choice for a cream of mushroom soup substitute as I have never actually tried to make cream of mushroom...) and threw in some almond slices and topped with soy cheese (which still contains a bit of milk protein but you can probably find some that is totally dairy free). I baked it until it was warmed through and slightly browned. The only changes I would make next time is to add 2 bags of frozen beans and hide out somewhere so I don't have to share.
