Guest guest Posted April 21, 2005 Report Share Posted April 21, 2005 Title: Hearty Potato Vegetable Curry Categories: Main dish, Mcdougall, Vegetarian Yield: 6 servings -formatted by S.Grabowski 2 1/2 c Water 16 oz Tomatoes,Can chopped 3 lg Potatoes; chopped 1 lg Onion; cut in wedges 2 Garlic;Cloves crushed 1/2 lb Mushrooms; sliced 1 md Pepper; chopped 1 md Apple;Peeled & diced 1 tb Curry 2 tb GF flour (like chickpea) 1/4 c ;Water 3 tb Chutney 1 md Zucchini; chopped 1 1/2 c Peas, frozen Place water, tomatoes and the tomato liquid in a large pot. Add potatoes, onion, garlic, mushrooms, pepper, apple, and spices. Bring to a boil, reduce heat to a simmer. Mix flour and water. Add to vegetable mixture. Mix in well. Cover and simmer 30 minutes. Stir in chutney, peas and zucchini. Cook uncovered 30 minutes longer. Serve over brown rice.
