Remember to use only GF condiments. I just presume everyone has " safe " versions

of these in their kitchens if they are GFCF. BL

Title: Where's the Meatloaf?

Categories: Mcdougall, Main dish, Vegetarian, Ok

Yield: 4 servings

2 lb Tofu, mashed

1 2/3 c Rolled oats or other flake type GF cereal

1/3 c Ketchup

1/4 c Soy sauce

1 md Onion, chopped

2 tb Mustard

2 tb Worcestershire sauce

2 tb BBQ sauce

1/4 ts Garlic powder

1/4 ts Pepper

 

Combine all ingredients in a large bowl. Mix well. Press mixture into

a non-stick loaf pan. Bake at 350F for 1 hour. Remove from oven and

let rest for 15 minutes, then loosen sides with a spatula and invert

over a serving platter to remove.

HELPFUL HINT: Oil the pan with a non-stick spray if the pan is not

non-stick. Also, do not use quick cooking oats-they do not absorb

enough liquid and the loaf stays too moist.

Hi!

 

Newbie delurking with a quick question!

Commercial Worcestershire sauce has anchovies in it - can anyone recommend a

veggie/vegan alternative brand?

Hi GeorgyGirl,

 

Glad to have you come out of lurkdom so we could meet you! :) And a

good question. Yes, most commercial Worchestershire sauce has

anchovies in it. There are several recipes for a vegan version if you

wish to make your own. . .or Angostora Sauce (Safeway and other grocers

carry it) is a vegan brand of Worchestershire sauce. I am not certain

if it is gluten-free, though, so be sure to read the label. If it's

not and you require GF foods, you'll have to make your own from scratch.
