Guest guest Posted April 22, 2005 Report Share Posted April 22, 2005 Cranberry-Coconut Cookies 1/2 cup quinoa flour (or millet flour) 1/2 cup dried cranberries 1/2 cup walnuts, chopped 1/4 cup water 1/4 cup honey (or maple syrup) 1 cups sweetened coconut 1 tsp. vanilla 1/2 tsp. nutmeg 1/4 tsp. salt 1/2 tsp. ginger Mix all ingredients well, then spoon in mounds onto cookie sheet. Flatten cookies to about 1/3-inch thick. Bake at 300 degrees F. for 10 - 13 minutes. Cool completely before serving.
