zucchini carrot muffins

these are sooo good, enjoy!

 

1 cup brown rice flour

1 tsp baking powder

1/4 cup brown sugar

cinammon to taste

1/2 cup ground flax seed

1/3 cup crush walnuts

2 medium carrots, grated

1/2 zucchini, grated

1/3 cup apple sauce

1/4 cup soy milk

 

 

mix flour, baking power, sugar and flax seed. add carrots and zucchini

and fold in walnuts. add wet ingredient.

bake at 425 for 20-25 minutes.

makes 12 smallish muffins
