I adapted the recipe from the Quaker Oats (whole rolled) box to make a GF/Vegan cookie and these are AWESOME! I surprised myself -- these taste - and the texture is - JUST like the non-GF/non-vegan version, and maybe even better. 1 C Spectrum All Vegetable Shortening 1 C firmly packed brown sugar (could use less, actually... probably 3/4 C) 2 [Egg's worth of] Ener-G Egg Replacer 1 tsp vanilla 1-1/2 C Bob's Red Mill GF Pancake Mix (this already has leavening, and some white sugar) 2 tsp cinnamon (calls for 1, but I like alot) 1/2 tsp salt Couple shakes of Chinese 5-spice (optional, but adds a nice deep flavor) 3 C Old fashioned, rolled oats (You could substitute rolled Quinoa) Optional: raisins or choc chips (1 C) 1. Heat oven to 350 degrees (F) 2. Beat together shortening and brown sugar until creamy 3. Add egg replacer and vanilla; beat well 4. Add GF Pancake Mix, cinnamon and salt; mix well 5. Stir in oats and raisins (if desired) 6. Drop by large spoonfuls onto ungreased cookie sheet (I found they didn't need greasing); press down into cookie shape 7.
