Guest guest Posted July 3, 2006 Report Share Posted July 3, 2006 Morning Potatoes 4 large poatoes, pontiac or desiree 2 tablespoons (8 tsp) olive oil 1 tbsp (4 tsp) vegan margarine 1/2 medium onion, chopped 4 garlic cloves, finely chopped 2 small capsicums (bell peppers), cut into thin strips salt and freshly ground black pepper 2 tbsp (8 tsp) chopped fresh parsley 1 tbsp (4 tsp) snipped fresh rosemary 1. Peel potatoes and cut into 2 cm (3/4 " ) chunks. Cook in boiling water until tender, about 5 minutes. Drain and set aside. 2. In a large frying pan, cook onion and garlic in the olive oil and margarine until soft. 3. Toss in capsicum (bell pepper) strips and cook, stirring, for 1 minute. 4. Add potatoes and cook until golden and crisp around the edges (about 15 minutes), stirring occasionally. 5. Season generously with salt and pepper. Sprinkle with fresh herbs. Serve hot.
