Guest guest Posted July 3, 2006 Report Share Posted July 3, 2006 Spiced Green Lentil Salad 175 g (6 oz) green lentils, rinsed 2 medium onions, peeled and cut into wedges 200 g (7 oz) cauliflower, cut into large pieces 2 sticks celery, chopped 2 tablespoons (30 ml) oil 2 tablespoons fresh root ginger, grated 1 clove garlic, peeled and crushed 1 tsp cumin seeds, lightly crushed 1 tsp coriander seeds, lightly crushed 1/2 tsp turmeric 2 tomatoes, cut into wedges 2 tablespoons (30 ml) lemon juice 2 - 4 tablespoons (1/8 - 1/4 cup) chopped fresh coriander (cilantro) salt and freshly ground black pepper 1. Cook the lentils in a pan of boiling salted water for 20 minutes. 2. Put a steamer on top of the pan and add the onion, cauliflower and celery. Steam over the lentils for 15 minutes until just tender. Drain the lentils. 3. Heat the oil in a large frying pan. Add ginger, garlic and spices. Fry for 1 minute. 4. Add cooked vegetables and fry for a few minutes to colour them. 5. Add the tomato wedges and the lentils and warm through, stirring carefully. 6. Sprinkle with lemon juice, add some of the coriander (cilantro) and season well. Garnish with the rest of the coriander and serve with GF bread. Serves 4.
