Things sometimes differ between Canada (where I am) and the US, but caramel

colour in north america is generally corn based. If a product is imported it

runs a small risk of being wheat, but generally not.

 

The only additives we were ever told by Celiac Canada to avoid were the lake

dyes (red and blue) but they are seldom used in anything but candy these days

and there is some controversy over whether they contain gluten at all.

 

Sorry to not be more help. Personally I just avoid additives and

preservatives as much as possible anyway.

no, you were quite helpful..! thanks very much.. and

my hubby is both the celliac, and the

junk-food-junkie.. ;) in some respects, he needs

advance warning..

You know, that is not as unusual as it might seem. Most people with Celic's

didn't get just before the were diagnosed and many of them self-protect by

eating low gluten foods. Potato crisps, corn chips and stuff like that rarely

have wheat gluten in them and so it doesn't add to the bad feeling of

mal-absorption.

The best additive lists I have used are at :

It lists what many are derived from, possible side affects and

whether or not they may be derived from animal products.
