Guest guest Posted July 12, 2006 Report Share Posted July 12, 2006 Sweet Swamp Salad Fresh tomatoes, sliced or cut into wedges (sliced is better,more surface for the Su) Sliced cucumbers Sliced onions, seperated into rings black pepper Gently toss veggies in bowl. Pour cooled or cold Su over. Gently toss again. Let sit in fridge a couple of hours for the flavors to blend. To plate up, put a leaf of lettuce on salad plate, veggies arranged on top. Grate a little pepper over all. Or just put the bowl of the veggies on the table. Regular Swamp Salad is just the veggies and vinegar. (yuk) For my diabetic husband, I omit the sugar and cooking, and use a bunch of packages of Equal sort of stuff. (NatraTaste) Basic Su 1 cup sugar 1 cup white vinegar Salt to taste Combine sugar and white vinegar in saucepan on low heat. Stir to dissolve sugar. Add salt to taste. Remove from heat as soon as sugar is dissolved. Cool to room temperature (or store in refrigerator). Basic Su is also really good on sticky rice. Jeanne in Georgia Talk is cheap.
