Guest guest Posted July 12, 2006 Report Share Posted July 12, 2006 Untidy Josephs 1 tablespoon vegetable oil 1 medium onion, chopped 1 green, red, yellow or other sweet pepper, chopped (mixture of them looks nice) 3 cups cooked brown rice 2 16-ounce cans Mexican style pinto beans ¾ cup barbecue sauce (more or less depending on how untidy you like it, lol) whole grain buns Heat oil in large skillet over medium-high heat. Add onion and green pepper; cook 2 to 3 minutes. Add rice, beans and barbecue sauce. Simmer 10 to 15 minutes, until heated through. Adjust seasonings as you like. (hotter, sweeter, whatever) Serve on buns. Serving suggestion; Oven roasted sweet potato wedges (Peel sweet potatoes, cut into large wedges, lightly spray or toss with olive oil or other oil, roast at 425 F for about 20 miniutes, lightly sprinkle with finishing or other salt OR sugar) and either a tossed salad or fruit salad.
