Black Bean Lasagna with Spinach

Amount Measure Ingredient -- Preparation Method

29 ounces canned tomatoes with green chiles -- diced

(Southwestern salsa tomatoes with chilies)

6 ounces tomato paste

1 teaspoon chili powder

15 ounces lite ricotta cheese

1 egg -- slightly beaten

1/2 cup chopped onion

1 teaspoon Italian seasoning -- crumbled

5 1/2 teaspoons minced garlic -- divided

1 teaspoon salt

17 ounces frozen ready to use lasagna strips

30 ounces canned black beans -- drained, rinsed, drained

8 ounces six cheese Italian recipe blend shredded cheese

10 ounces frozen chopped spinach -- thawed, well drained

 

In medium bowl, combine next 4 ingredients, 1 tsp. minced garlic and salt. In

9x13 " glass baking dish spread about 1 cup tomato sauce. Place 5 lasagna strips

over sauce covering entire surface. Spread with 1/2 ricotta cheese mixture, 1/2

black beans and 1/3 shredded cheese. Spread with 1 cup tomato sauce. Top with

another layer of 5 lasagna strips. Combine drained spinach with 1/2 tsp. garlic;

spread over lasagna strips. Spread with remaining ricotta cheese and beans and

1/3 shredded cheese. Spread with remaining tomato mixture and sprinkle with last

1/3 shredded cheese.

 

Bake, covered, in a preheated 375F oven 30 min.; uncover. Continue to bake until

hot and bubbly (about 25 min. longer). Let stand 10 min. before cutting into

squares.
