Guest guest Posted January 21, 2004 Report Share Posted January 21, 2004 TOMATO PEANUT SAUCE 1/2 cup chopped onion 1/2 cup diced green bell pepper 2 small tomatoes, diced 1 cup hot " V8 " 6 Tbsp. smooth peanut butter (natural style) 2 Tbsp. Liquid Aminos 1/2 tsp. garlic powder 1/2 tsp. oregano Brown onion and bell pepper over medium high heat in a nonstick pan or skillet. Add tomatoes and 1/2 cup of the " V8 " and simmer. In a small bowl, gradually add the remaining " V8 " to the peanut butter and mix well. Add to pan with remaining ingredients and continue simmering and stirring until thoroughly heated. Serve over pasta, rice, or vegetables. Yields about 2 cups or 4 servings.
