Guest guest Posted April 2, 2005 Report Share Posted April 2, 2005 My family is now in quite a pickle. Started off some years ago when I learned that I was severely allergic to soy. But I adapted all my recipes and we moved on. Then about a year and a half ago we learned that my middle son is severely allergic to peanuts and tree nuts (along with shellfish). Well, that did away with a lot of mainstays and rescue meals (like PB & J). My husband gets a rash when he eats tomatoes. Now we have learned that my youngest child has Celiac and must be gluten free. I'm really struggling to come up with nutrioua meals that will meet everyone's needs and still get some protein into us. Frankly we are getting sick of beans and corn. And, if possible, my hubby and I would like to stay vegan... the kids could care less. Almonds are actually a member of the plum family and not related to tree nuts like walnuts, pecans and hazelnuts. If you haven't tried those or had him tested for it, you might look at almond butter. There's a risk of soy contamination, but not much. I haven't reacted to the soy-free versions. He is allergic to pine nuts, unfortunately (and I get mouth sores when I eat them, so I think I'm allergic to them too.
