Guest guest Posted February 8, 2005 Report Share Posted February 8, 2005 Pottage of Carrots and Celery 4 cups chicken-style broth 8 carrots, sliced 2 stalks celery, chopped leaves of celery to taste (about 1/3 cup) 1 onion, sliced 1/4 ucp parsley, chopped Salt to taste (pepper optional) 1 bay leaf 2 cloves of clove 1 1/2 cups soy milk, unsweetened Combine the chicken-style broth, carrots, celery, celery leaves, onion and parsley in a soup pot. Salt and pepper. Add bay leaf and cloves. Bring to a oil and simmer for at least 30 minutes (until vegetables are soft). Mix in blender until consistency is smooth. Add soy milk.
