Guest guest Posted February 8, 2005 Report Share Posted February 8, 2005 ROASTED POTATOES 1 pound yams, peeled and diced into 1-inch pieces 1 pound red and white potatoes, scrubbed and diced into 1-inch pieces 1 clove garlic, finely chopped 1/4 cup olive oil Salt and pepper to taste 1 tsp. dried thyme 1 tsp. dried rosemary Preheat oven to 400 degrees. Place diced potatoes into a large metal baking dish. Drizzle olive oil over potatoes and lightly stir until all potatoes are evenly coated. Add garlic and seasonings. Stir to distribute evenly.
