Chocolate Cashew Cookies

Source: Fabulous and Flourless

 

4 Tbsp. vegan margarine

1/4 cup sugar

1/2 cup ground toasted cashews

2 oz. bittersweet chocolate, grated

 

Preheat oven to 275 degrees. Flour a work area with rice flour. Place all

ingredients in a bowl and combine them using a pastry blender. Place the dough

on the work area and divide into three equal parts. Roll each part into a rope

about 1 inch in diameter. Cut each rope into 1 " lengths. Form the segments

into balls and place them on an ungreased cookie sheet at least 1 " apart. Bake

them in the upper part of the preheated oven for 15 minutes. Allow the cookies

to cool before removing them from the pan.
