Guest guest Posted April 17, 2005 Report Share Posted April 17, 2005 Carrot Slaw 2 cups shredded carrots 1/2 cup chopped green pepper 1/4 cup chopped onion 1 small red apples shredded unpeeled 1/4 cup plus 2 tablespoons raisins 2 tablespoons olive oil 2 1/2 tablespoons lemon juice 1 tsp. stevia powder (or 4 tbsp. acceptable sugar) 1/4 teaspoon celery seed 1/4 teaspoon salt 1/4 teaspoon dry mustard In medium bowl, combine veggies and apple. In a small sauce pan, combine remaining ingredients. Bring to a boil over medium-high heat. Pour over salad; Toss thoroughly. Chill 2-3 hours and serve.
