Guest guest Posted April 17, 2005 Report Share Posted April 17, 2005 Pumpkin Ice Cream 1 c. raw cashews 1 c. pear juice (from canned pears) Place these two ingredients in blender and blend until creamy. Do not under blend. Add to blender the following ingredients: 1/4 tsp. salt 1 tsp. vanilla 1/3 c. maple syrup 1/4 c. tofu milk powder (Better Than Milk - lite works well) 1 qt. canned pears (Juice as previously been drained off and used in above mixture) 2 c. canned pumpkin or freshly steamed 1 tsp. pumpkin pie spice Freeze the above mixture. Works well to pour into popscicle molds and then freeze. Will fit nicely through champion juicer then.
