Pumpkin Ice Cream

 

1 c. raw cashews

1 c. pear juice (from canned pears)

 

Place these two ingredients in blender and blend until creamy. Do

not under blend.

 

Add to blender the following ingredients:

 

1/4 tsp. salt

1 tsp. vanilla

1/3 c. maple syrup

1/4 c. tofu milk powder (Better Than Milk - lite works well)

1 qt. canned pears (Juice as previously been drained off and used in

above mixture)

2 c. canned pumpkin or freshly steamed

1 tsp. pumpkin pie spice

 

Freeze the above mixture. Works well to pour into popscicle molds

and then freeze. Will fit nicely through champion juicer then. Put

the frozen popsicles through the champion juicer and serve with your

favorite desserts or as ice cream cones.
