Guest guest
Chickpea Pancakes Source: Veg. South Beach Diet list 1 cup chickpea flour Quarter of a red onion diced Cilantro few sprigs chopped finely Dill chopped finely Quarter of a Red Bell pepper diced quarter of a cucumber grated Quarter of a zucchini grated Salt Pepper 2 teaspoon cumin powder(Optional) chopped hot peppers (If you are able to handle hot and spicy) Directions Mix all the above ingredients and make a dough. You can add additional water to make the dough softer. Use a sheet of aluminium foil sheet. Put 2 teaspoons of oil on the foil. Take a ball of the dough and pat it with your hands as thin as you can make it on the foil. Meanwhile heat a frying pan. Invert the foil with the dough onto the pan so that the dough starts cooking. Let this side cook and slowly peel the foil. Turn over the pancake and cook the other side. The pancake can be eaten as is or preferably with your favorite chutney.
