I'm also placing a photo of it in the 'photos' section of our website. Although I made the recipe 'as given', I was VERY generous with the cashews and seasonings. I prepared them yesterday (fried in olive oil) and the reheated them in a casserole dish in the oven for dinner today. Although they were good yesterday, they were even better today, as the flavors had a chance to marinate. They can be baked on a cookie sheet rather than fried, if desired. The tartar sauce is a terrific accompaniment for the croquettes and are worth the time and effort of preparation. Croquettes 1 lb (450 g) tofu 1 oz ( 30 g) cashews - coarse chopped 1 oz ( 30 g) pimento 1 oz ( 30 g) onion 1 oz ( 30 g) celery 1 oz ( 30 g) green pepper 1/2 tsp garlic salt 3/4 tsp seasoning salt 1/2 tsp salt 1/2 tsp brewers yeast 1 Tbsp (3 tsp) gf tamari sauce or Bragg's Liquid Aminos chicken-style seasoning to taste *You may be more generous with the vegetable ingredients. Mix together well. Form into patties or balls. Fry in hot skillet or bake on cookie sheet at 350F (177C) until golden brown. ------------------------- Tartar Sauce 1 Tbsp (3 tsp) onion 1 Tbsp (3 tsp) pepper 1 Tbsp (3 tsp) pimento 2 Tbsp (6 tsp) pickle 1 cup vegan mayonnaise 1 tsp lemon juice salt to taste Mix ingredients together well. Use as a sauce for the croquettes. You may add 2 Tbsp (6 tsp) of tomato juice for added color and flavor. (Catsup also works for coloring if you don't have tomato juice on hand). Enjoy!!!!!
