Guest guest Posted October 30, 2005 Report Share Posted October 30, 2005 BLUEBERRY SQUARES (This recipe uses Nut Crust as sent in a previous posting). 1 cup 100% grape juice, frozen concentrate 1 cup water 1/2 cup gf flour blend or brown rice flour (or 1/4 cup cornstarch) 1/4 cup canola oil pinch of salt 1 tsp. vanilla 3 cups blueberries, fresh 1 recipe Nut Crust tofu whipped topping In a medium saucepan, whisk the flour into liquid ingredients (except for the vanilla and blueberries) and bring the mixture to a boil. The mixture will thicken. Let cool and then stir in vanilla and berries. Pour into a cooled nut crust in a 9 x 9 inch pan. Top with tofu whipped topping and refrigerate for 2 hours before serving.
