Guest guest Posted April 29, 2006 Report Share Posted April 29, 2006 Here's a recipe that works for us. You might want to cut in l/2 though, this is for our family of 8. Where it says milk, use almond if thats what you use. We use homemade rice milk or almond. One of mine is allergic to corn so we change cornstarch also. Hope it works for you. 3/4 cup sugar/sweetener 3/4 cup applesauce l l/4 cups cornstarch l l/4 cups sweet potato flour (asian store, I blend it first to make it finer) 3/4 tsp. xanthan gum tsp. salt 3 3/4 tsp. Baking soda 2 l/4 cups milk 3 tsp. vanilla 3 tsp. apple cider vinegar 4 l/2 tsp. egg replacer mixed with 6 Tbsp. warm water til foamy Mix all ingredients together,add blueberries if you like or whatever you prefer. I use my electric skillet, this makes l6 lg. pancakes. Everyone is different but this one works great for our family of kids all under l5. Good luck.
