Egg free, rice free, soy free pancakes

Does anyone have a good pancake recipe they can share? My son

recently tested intolerant to rice, so I have to find a new recipe

since I was using Namaste ones. Thanks.

Here's a recipe that works for us. You might want to cut in l/2

though, this is for our family of 8. Where it says milk, use almond

if thats what you use. We use homemade rice milk or almond. One of

mine is allergic to corn so we change cornstarch also. Hope it works

for you.

3/4 cup sugar/sweetener

3/4 cup applesauce

l l/4 cups cornstarch

l l/4 cups sweet potato flour (asian store, I blend it first to make

it finer)

3/4 tsp. xanthan gum

tsp. salt

3 3/4 tsp. Baking soda

2 l/4 cups milk

3 tsp. vanilla

3 tsp. apple cider vinegar

4 l/2 tsp. egg replacer mixed with 6 Tbsp. warm water til foamy

 

Mix all ingredients together,add blueberries if you like or whatever

you prefer.

I use my electric skillet, this makes l6 lg. pancakes. Everyone is

different but this one works great for our family of kids all under

l5. Good luck. Lynne ( I have more for zucchini/pumpkin breads too

Welcome to the group. Please send along any recipes you have. All

recipes posted are added to the Files, and the more the merrier. It's

great to have recipes to offer to those with additional food

sensitivities.
