Flour Tortillas

2 cups GF flour mix

3/4 tsp salt

1 1/2 tsp xanthan gum

1 1/2 tsp baking powder

2 1/2 tbsp oil

3/4 cup water

 

yields 8, 8 " tortillas

 

Mix dry, then add oil and water (use paddle beater, not dough hook)

Mix on high a few minutes until dough is well blended and forms a smooth ball.

Let dough rest for 10 minutes

Divide into 8 equal sized balls.

Flatten each portion and roll out on a tapioca floured surface.

Heat an ungreased griddle until very hot.

Cook for a minute or so on each side.

(you will vary the amount of water used depending on the humidity in your

area)
