Guest guest Posted April 24, 2006 Report Share Posted April 24, 2006 Hi all, We had such a good evening, I just had to share. We (dh, myself and 6 children) just moved to a new town. Our new next door neighbors stopped by last weekend to introduce themselves and to invite all of us to dinner last night. We spoke all of 10 minutes, during which I mentioned that our 2 sons are autistic, we are vegetarian and my 7 year old is celiac. I was really worried about last night so I made some penne and soy cheese casserole and the brownies to take (though I chickened out on trying the tofu for the eggs) so that there would be gluten free food to eat. This wonderful woman had researched online to find vegan recipes (she knew that autistic kids are often milk free and “didn’t know what kind of vegetarians” we were). And she asked her son-in-law doctor about celiac so she knew what grains to avoid. It was wonderful. A full baked potato bar w/ homemade chili (I’m going to share the recipe when I get it from her), grilled tomatoes, salad fixins with homemade dressing (so as to be gf vegan). I just cannot believe that someone would go to so much trouble. I was really touched. And her grandkids were there to play w/ my children and we all had a good time w/o worrying about the food :-) Hope everyone else had a great weekend.
