Guest guest
Stephanie, I don't know either of these two models, but I have two requirements of a bread maker - the loaves must be horizontal, not vertical as the weight of a loaf will usually make it collapse in on itself. The second requirement is that it must be entirely programmable as gfcf breads do not require a second rise (nothing to stretch) and baking times can vary. If these two have those two things you are set. From what I can see, having a quick glance at amazon, the 2500 has the horizontal loaf, but the 2200 has the vertical. Personally, I would go with the 2500, which also has at least another 1/3 of programmable options. BL On 7/16/06, Stephanie J. Guest guest
I found this article on celiac.com, thought you might be interested. Cookware It's a good idea to have the proper cookware in your kitchen before attempting to make gluten-free bread. You must have a heavy-duty stand mixer like the Kitchenaid mixer. A heavy-duty mixer properly aerates the batter producing a lighter bread with a fine crumb and more height. You should also have a good quality loaf pan. It helps to know if your oven is running at the correct temperature (an inexpensive oven thermometer will tell you what adjustments you will need to make). Bread machines can be tricky with gluten-free bread, you can call the Celiac Hotline at Red Star Yeast for the most current bread machine recommendations 1.800.423.5422. good luck Harry , " Stephanie J.
