I do make a few changes in it -- I use 3 cans of stewed tomatoes instead of the onions and tomatoes and add parsley and oregano, sage, thyme and rosemary. Sometimes I add bunches of kale if I have it handy. In winter I try to keep the leftovers frozen for instant meals. In dead of winter - like after Christmas I add beets, carrots and potatoes to make it more rib sticking and as we get closer to spring I make it lighter and lighter till we are back to cabbage and stewed tomatoes for summer. No V-8, but I do have Bloody Mary mix, so I'm trying a bit of that!] This soup was popular many years ago as a weight loss help. It is still on the Internet, where I got this recipe. I wouldn't eat this soup...for " each meal, " but it is a handy one to have ready when you need something for a ready to eat lunch, or for a " snack. " I'd make this and freeze it in containers or zip bags for easy portions to pop into the Microwave. Not knowing if Lipton's Soup Mix was veg; I found a recipe, listed below the cabbage soup, to use for a substitute. I think it is a handy seasoning for a lot of recipes. Barb K. PS: Step one...I have the vital wheat flour for my seitan! [!!...$6.55 for 22 oz] ~~~~~~~~~~~~~~~~~~~~ Cabbage Soup Recipe a.. 6 large green onions b.. 2 green peppers c.. 1 or 2 cans of tomatoes (diced or whole) d.. 3 Carrots e.. 1 Container (10 oz. or so) Mushrooms f.. 1 bunch of celery g.. half a head of cabbage h.. 1 package Lipton soup mix -->see make your own i.. 1 or 2 cubes of bouillon (optional) j.. 1 48 oz can V8 juice (optional) k.. Season to taste with salt, pepper, parsley, curry, garlic powder, etc. Directions: Slice green onions, put in a pot and start to saute with cooking spray. Cut green pepper stem end off and cut in half, take the seeds and membrane out. Cut the green-pepper into bite size pieces and add to pot. Take the outer leafs layers off the cabbage, cut into bite size pieces, add to pot. Clean carrots, cut into bite size pieces, and add to pot. Slice mushrooms into thick slices, add to pot. If you would like a spicy soup, add a small amount of curry or cayenne pepper now. You can use veg. bouillon cubes for seasonings. These have all the salt and flavors you will need. Use about 12 cups of water (or 8 cups and the V8 juice), cover and put heat on low. Let soup cook for a long time - two hours works well. Season to taste with salt and pepper. Make It Yourself Onion Soup Mix 3.4 C minced onion 1/3 C instant vegetable bullion powder 4 t. onion powder 1/4 t. crushed celery seed 1/4 t. sugar ~~~~~~~~~~~~~~~~~ 5 T. = 1 1/4 oz. package. Love Cabbage Soup, however it is made It's good with a can of crushed tomatoes too, instead of the juice, although one might add more seasoning. By coincidence I hadn't made cabbage soup in a while but the day before yesterday I made a quick Caldo Verde. (That's cabbage and potato soup, more or less.) Always a treat.
