Guest guest Posted October 24, 2004 Report Share Posted October 24, 2004 * Exported from MasterCook * Lentil and Pepper Sauce for Pasta - Vegan 8 pts Recipe By : Serving Size : 2 Preparation Time :0:00 Categories : Pasta Sauces Vegan Weight Watcher Points Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Tablespoon Olive Oil 1 large Onion -- finely chopped 2 Garlic Cloves -- Crushed 1 Bell pepper, green -- finely chopped 1 Bell pepper, red -- finely chopped 2 Chilies -- finely chopped 1 large Tomato -- diced 1 cup Fresh Vegetable Stock 4 oz Lentils -- pre-cooked 1 teaspoon Basil -- Freshly Chopped Salt and Black Pepper 1. Heat the oil in a large saucepan, add the onions, garlic, peppers and chili and sauté until soft, stirring from time to time. 2. Add the tomatoes and stock, mix well, reduce the heat, cover and simmer for 20 minutes. 3. Add cooked lentils basil, salt and pepper and heat gently for 5 minutes stirring constantly and adding a little water if the mixture is too thick. Serve hot with pasta, gnocchi or rice.
