I'm 5' 4 " , medium build, and want to get back to 130-135 range...I weighed in at that range (and lower!) all thru my late 20s and 30s and most of my 40s! and feel so much better at a lower weight...I also want to get my BP down and for every 10 lbs. lost is a nice drop in BP points so that is a goal...Regarding making Seitan...I look at it like making home made bread...it's a little time consuming but sooo worth it) I do it on a Sunday afternoon and expect it to take a couple of hours at least...you end up mixing the gluten flour with the herbs and spices that you want, adding the Soy sauce, kneading the dough and even tho I use gluten flour I rinse in cold water well to get any starch out...then roll it on my butcher chopping block...add a little extra gluten flour and roll it into a roll and cut the steaks about an inch thick from the roll..then boil them for 20 minutes in a nice herbal broth with peppercorns, bay leaves, garlic..whatever you want...I use Spike seasoning added too. I personally have figured out in order to get a little tougher consistency I then bake my steaks for 20 minutes at 350 or so..I sound redundant cuz I just posted on this but with a little time devoted to it it's a great protein for vegetarians (about 30 gms. per steak) and you can season however you want and experiment with the flavor...I then freeze my steaks in the broth that I boiled them in in freezer baggies and have many good protein steaks for yummy veggie sandwiches!! After reading some previous posts I might start using whole wheat flour but the rinsing process is a little longer to get the starches separated away from the gluten protein so I haven't decided yet..I might just keep using gluten flour...anyway it's not a difficult process at all...I'll post Dr. Ornish's recipe for an easy Seitan. Also I think journaling is such a help but I feel that this on-line support networking is almost like journaling too...I did start writing in my journal a week ago when I got back on my treadmill and it feels so good just to write that I did it for the first time in I don't know how long...and my achey arthritis ridden body felt sooo much better for it!
