Guest guest Posted April 11, 2005 Report Share Posted April 11, 2005 Cucumber Salad Source: 100% Vegetarian (adapted) To make the TOFU DRESSING, combine the following in a blender and whiz until smooth: 1/2 c. crumbled tofu 1/2 c. water 1/2 tsp. honey (or alternative vegan liquid sweetener) 1/2 tsp. salt 1/2 tsp. onion powder 1/2 tsp. garlic powder 1 tsp. dill weed 2 Tbsp. lemon juice To make the salad, pour half of the dressing over the following: 2 cucumbers, peeled and sliced 2 green onions, sliced Serve: cold. Refrigerate remaining dressing and use within a few days over a tossed salad. Variation: Replace dressing with the following: 1/4 c. lemon juice 1 tsp. dill weed 1/4 tsp. salt Menu idea: cucumber salad, baked sweet potatoes, cooked vegetable blend, whole wheat bread o rolls, and rice patties.
