Guest guest Posted April 11, 2005 Report Share Posted April 11, 2005 Garbanzo-Zucchini Salad Source: 100% Vegetarian Mix the following together in a bowl: 1 8 " zucchini cut into bite-sized pieces (not slices) 2 cups chopped tomato 1 16 - 19 oz. can garbanzo, drained (about 1 1/2 - 2 cups) 2 tsp. dry parsley OR 2 Tbsp. fresh chopped parsley 1/2 tsp. sweet basil 1/2 tsp. garlic powder 1/4 tsp. oregano leaf (not ground) 1/4 tsp. dill weed 1/4 tsp. salt 1 - 2 green onions, chopped Then pour on the following and toss lightly: 2 - 3 Tbsp. lemon juice If possible, allow salad to marinate 30 minutes or more before serving.
