Guest guest Posted April 11, 2005 Report Share Posted April 11, 2005 Three Bean Salad Source: 100% Vegetarian Combine the following in a bowl and mix lightly: 2 cups cooked kidney beans (1 - 15 oz. can, drained) 2 cups cooked garbanzos (1 - 15 oz. can, drained) 2 cups cooked green beans ( 1 - 15 oz. can, drained) 1/2 cup chopped bell pepper 1/3 cup chopped or sliced olives 1/4 cup finely chopped onion In a separate bowl mix together the following dressing and stir until the honey is dissolved: 1/4 cup lemon juice 2 Tbsp. soy sauce (or Bragg's Aminos) 1 Tbsp. honey (or acceptable vegan sweetener) Pour dressing over salad. Mix lightly. Refrigerate several hours before serving, stirring very gently every 45 minutes. Note: Red beans may be used in place of kidney beans.
