Guest guest Posted April 11, 2005 Report Share Posted April 11, 2005 SILVERBEET SALAD Source: Julie R. 4 leaves silverbeet (or substitute spinach) 1 cup grated carrot 1/2 cup spring onions, chives or leeks 3 rings orange 1 cup rice (cooked and cold) parsley, chopped 1/2 cup apple, diced 1 cup cooked chick peas or Lima Beans Finely shred leaves (not stalks). Finely chope the ring of orange without rind (keep rind for the dressing). Toss all ingredients together. Pour over the salad dressing and toss just before serving. DRESSING: 4 tbspn olive oil 1 clove garlic (optional), finely chopped 8 tbspn orange juice 1 tspn sweet basil salt and pepper (optional) zest of orange slices Mix all ingredients (finely chop basil leaves).
