Guest guest Posted October 11, 2005 Report Share Posted October 11, 2005 CARROT FETTUCCINE 2 lb. bag of carrots 3 tbps. olive oil 2 tbps. vegan margarine ½ cup frozen peas, defrosted 3 tbps. bread crumbs* Salt and pepper to taste Vegan parmesan 'rice' cheese, as much as you want Peel and clean carrots. With peeler, shave long strands of carrots (will resemble fettuccine). In a large frying pan, heat oil and vegan margarine until melted. Add carrots and sauté over medium to high heat until tender, yet firm, about 8-10 minutes. Add peas, salt and pepper and vegan parmesan cheese, and toss. We omit the bread crumbs and the vegan parmesan cheese and peas. Add gf soy sauce (or tamari) and toasted sesame seeds. It's delicious and the Vit A in the carrots is made more usuable because they are cooked and paired with a 'fat'. I think this version sounds yummy also!
