One cup mix is used per recipe (below). To make pudding: 1 cup pudding mix 3/4 cup liquid milk substitute (soy or DariFree work best) 1 cup water (reduce to 3/4 cup for thicker pudding) 1 egg, beaten (or equivalent) 1 tsp. pure vanilla 1 T. CF margarine Empty mix into 1-2 qt. saucepan. Over low heat, add milk and water slowly. Whisk until smooth. Raise heat to medium and cook, stirring constantly, until pudding thickens and small bubbles begin to form around the edge of the pan. Cook 2-3 minutes longer, stirring constantly to prevent scorching. Remove from heat. Stir vanilla into beaten egg, and then whisk 1/2 cup hot pudding into the egg mixture. Return egg mixture to the pot and add margarine. Stir well. If lumps form, strain as you pour into serving dishes. Cover with plastic wrap to prevent skin forming on top of pudding, and chill.
