Rebekah, two that I especially like and are " tried and true " are the Tofu croquettes and/or the Quinoa Potato Croquettes that are listed in the archives. Amy's Pecan Croquettes also sound delicious (she always shares great tried and true recipes. The croquettes work well as " meatballs " in a recipe either with a sauce or with gf pasta. Yum!
