Guest guest Posted November 23, 2004 Report Share Posted November 23, 2004 POLYNESIAN WILD RICE PILAF 4 cups wild rice, cooked according to package instructions 1 large onion, chopped 1/2 cup celery, chopped 1 - 15 oz can crushed pineapple, drained 2 Tbsp vegan margarine Cook rice until all liquid is absorbed. For added flavor, you may use chicken-like broth instead of just water to cook rice. While rice is cooking, saute onion and celery in margarine until tender. When rice is finished cooking, add sauteed onion, celery and pineapple to the rice and mix well. Place mixture in a baking dish and bake for 15-20 minutes in a 350 F. oven.
