Chocolate Pudding Master Mix

2-1/4 cups Vance's DariFree (she apparently used the regular powder--

I'd probably use the chocolate one here)

1 cup sugar

1/2 cup arrowroot or tapioca starch

2/3 cup sifted, unsweetened cocoa

1/4 tsp. salt

4 tsp. xanthan gum

2 packets unflavored gelatin (use the vegan equivalent)

 

Combine well and store in airtight container.

 

To make pudding (no egg or egg sub. needed in this one):

 

1 cup pudding mix

3/4 cup water

1 cup milk (DariFree or soy)

1 T. CF margarine

1/2 tsp. pure vanilla

 

Empty mix into 1-2 qt. saucepan. Gradually stir in water and milk

and bring to boil over medium heat, stirring constantly to prevent

scorching. Reduce heat and simmer for 2 more minutes, stirring

constantly.

 

Remove from heat and stir in margarine and vanilla. Strain into

serving cups. Cover with plastic and chill.
