Guest guest Posted March 1, 2006 Report Share Posted March 1, 2006 Spiced Vegetables with Tamarind Source: Vegetarian Recipes for Yopur Slo-Cooker, by Annette Yates. 1 tbsp (3 tsp) olive oil 1 tsp coriander seeds 1 tsp cumin seeds 2 cloves garlic, finely chopped 2 chillies, seeded and thinly sliced into rings 1 small onion, thinly sliced 1 large potato, cut into small dice 2 carrots, cut into small dice 2 cups vegetable stock (I used water with 2 tsp chicken-style bouillon powder) 1 tsp ground turmeric 1/2 tsp mixed spice (-OR- apple pie spice) 1/2 tsp ground ginger 4 1/2 tsp tamarind paste 425 g (15 oz) can chickpeas (garbanzos), drained and rinsed salt and freshly ground black pepper 1 large zucchini, cut into small dice 3/4 cup baby peas 200 g (7 oz) plain soy yogurt (-OR- see recipe below) 2 tbsp (6 tsp) chopped fresh coriander (cilantro) 1. Pre-heat the slow cooker on high. 2. Heat the oil in a large pan, add the coriander and cumin seeds and cook gently, stirring for 1 minute. 3. Add the garlic and chillies and cook gently, stirring for 30 seconds to 1 minute. 4. Stir in the onion, potato and carrots. Increase the heat and cook for 2 - 3 minutes, stirring occasionally, until just beginning to brown. 5. Stir in the stock, turmeric, mixed spice, ginger and tamarind, then the chickpeas and seasoning. Bring just to the boil, transfer to the slow cooker and stir gently. 6. Cover and cook on low for 6 - 8 hours until everything is tender, then gently stir in the zucchini (I added the zucchin about 1 hour before serving), frozen baby peas and half the yogurt and cook for 30-40 minutes. All the ingredients should be very soft and tender. 7. Stir in the chopped coriander (cilantro). 8. Top each serving with a swirl of the remaing yougurt. I served this on a bed of basmati rice, a dollop of mango chutney and some pappadums. -------------------------- Tofu Yogurt 300 g (8 1/2 oz) firm silken tofu 6 - 8 tsp lemon juice 1/2 tsp salt 1 tsp icing (powdered/confectioners) sugar (-OR- other sweetener) Whiz all ingredients together in a food processor.
