Rice 'n Peach Salad 1 1/2 cups cooked brown rice 1 can (11 oz) whole kernel corn, drained OR 1 1/2 cups corn cut from the cob 1 cup chopped, toasted almonds 1 cup fresh or frozen (thawed) peas 1 peach, peeled, coarsely chopped 1/2 cup Catalina salad dressing 1/4 cup chopped red onion 1/4 cup chopped cilantro or fresh parsely Mix all ingredients in large bowl. Refrigerate until ready to serve.
