It is really good and can usually be substituted to use for things like pancakes. Haven't tried it for the other things, but I'd think it would be ok. Guest guest Posted December 7, 2005 Report Share Posted December 7, 2005 For all my cakes and muffins I use a very simple mix of 3 or 4 parts rice flour (brown or white, but I prefer brown) to 2 parts potato starch or tapioca.
