How about:

 

1 cup superfine brown rice flour

1/2 cup white rice flour

1/2 cup tapioca starch

1/4 cup almond flour

 

That's a rough mix - you'll need to experiment with

it...

Have you tried Besan flour (also called Chick Pea Flour). It is really good and

can usually be substituted to use for things like pancakes. Haven't tried it

for the other things, but I'd think it would be ok.

I need some extra help. I've already gone through the files. I need a

flour mix that can be used for pancakes, muffins or cakes. It cannot

not havv corn, sorghum, soy or potato starch in it. Thanks!

For all my cakes and muffins I use a very simple mix of 3 or 4 parts

rice flour (brown or white, but I prefer brown) to 2 parts potato

starch or tapioca. I normally use potato but tapioca works fine also.

I've been using Bob's Red Mill panckae mix, but I'm trying to get

away from corn and potato starch and need help with ratios. I'd liek

to make a pancake mix at home as much as possible.
