Usually I get through it by taking the time to make one big batch of chili and freezing it in smaller portions. Then I can add different extras to it each time (ie different type of gf pasta, potatoes, rice, quinoa etc.) as for fast portable meals, cereal with fruit is always great (just bring the 'milk' in a seperate container), grilled cheese on gf bread. lentil soup is also quick to make and filling. basically, since I don't mind cold food, I bring stuff in containers to school. hope this helps, good luck , " lickifu " <d_dungey@h...> wrote: > > It is now crunch time at school and I never have time to cook proper > meals. Guest guest Posted November 28, 2005 Report Share Posted November 28, 2005 Hi, some snack ideas that my kids like... -rice crackers with hummus for dip -veggie muffins and breads (like carrot, squash, zucchini, sweet potato) -granola bars (easy and quick to make-I make them with brown rice syrup, so there's no sugar too) -fresh fruits and veggies, of course some one dish meal ideas... -casseroles...rice or quinoa or noodles with veggies and beans or lentils in a sauce, you could use a tomato sauce or a veggie broth -stews...veggies and beans -potatoes and beans baked in a milk sauce (whatever substitute you use) Some of my best creations have been last minute and end up in just one pot. Guest guest Posted November 30, 2005 Report Share Posted November 30, 2005 Hi, I meant to answer sooner, but we were short on time here, too :-) Lunch items we use are: Soy yogurt Raw veggies (pepper strips, celery, carrots, cherry tomatoes) Hummus, nut butter, or tofutti cream cheese for dip Thermos w/ last night's leftovers Muffins For quick dinners, I tend to use a lot of baked potatoes w/ toppings like chili, " cheese " , or just gravy I also reach for the pasta a lot, with just tomato sauce w/ TVP added or a white sauce. I also keep my George Forman grill on the counter for easy access for those who want a quick grilled " cheese " sandwich. Guest guest Posted November 30, 2005 Report Share Posted November 30, 2005 Garbanzo beans make a fine finger food (at least my son like them) Nut mixes (raw peptitas, sunflower seeds and macadamia is his favorite) " Burrito Triangles " (take two warmed rice tortillas cut into pie pieces, smeared with refied beans, season with a GF taco seasoning) Popcorn (I have an old fashioned popper on my sink at all times) Taro chips Applesauce Fruit squeezies (there is an organic brand at Whole Foods) I grew up on PB & Honey on toast. My son can't have peanuts, so I make an alternative spread with honey, cashew nut butter, almond butter and a little tahini. You can dip carrots in it or spread onto celery. My son hates celery and most raw veggies, so we also spread it on rice or millet toast. Macadamia nut butter paired with honey on toast is heavenly too.
