Guest guest Posted April 26, 2005 Report Share Posted April 26, 2005 Vegan Mashed Potatoes Source: Taste of Health 2 1/2 to 3 lbs. medium to small red-skinned potatoes, with skins Water 2 to 2 1/2 teaspoons salt 1 cup original or vanilla-flavored almond milk Wash and scrub potatoes removing any bad spots. Cut into medium-sized pieces. Add enough water just to cover, and add salt. Boil on medium heat until soft when pierced with the tip of a knife. Discard water. Put potatoes into a mixing bowl and add the almond milk. Blend until fairly smooth. The beaters will actually remove about half of the skins for you, but your mashed potatoes will still have a rustic look. Great for Thanksgiving!
