Guest guest Posted April 26, 2005 Report Share Posted April 26, 2005 Red Onion-Cranberry Relish Source: Taste of Health 1 large red onion, thinly sliced into rings 1 Tbs. canola oil 1/4 cup raisins 1/4 cup any berry-flavor all-fruit juice (such as Welch's white grape- raspberry) Salt 3/4 cup pure maple syrup 4 inches stick cinnamon 1 cup water 1 package (12 oz.) fresh or frozen cranberries, washed and sorted 2 Tbs. cornstarch 1/2 cup juice, reserved from the onion-cranberry mixture Saute onion in oil until tender and just beginning to brown, about 5 minutes. Combine raisins, juice and a dash of salt in a saucepan and simmer 10 minutes uncovered. Add to above and cook 1 minute. Remove from heat and set aside. Combine maple syrup, cinnamon and water in a saucepan. Add the berries to the syrup-cinnamon-water mixture and bring to a low boil. Cook just until berries pop. (If you cook too long, the berries will open up and all the seeds will come out). Pour the juice and berry mixture into the frying pan with the onion mixture. Remove approximately 1/2 cup of the juice from the pan and stir in the cornstarch until well blended. Add the cornstarch mixture back to the onion and cranberries, and bring to a low boil to thicken.
