The black bean burger sounds good too. My mom hasn't eaten meat for years and has tried a few veggie burger recipes, but without much success so she would be interested in it too I know. My son did love lasagna even though he has only eaten it with no cheese. So, I could just replace the hamburger with sauteed veggies? The main thing he likes is the noodle part. My son's rice allergy level was fairly low and the doctor said it was OK to try him on rice occasionally so I made him some " Rice A Roni " I found in the archives last night. He loved that! But, I didn't have any " chicken broth " type seasoning called for. What is a good brand/source for that? I used to make my own organic chicken broth to use in dishes, I thought I can make a veggie broth to use in place of that. Any recipe, or is it as simple as just throw a bit of this and that veggie ends into a pot and simme r a while? A challenge will be eliminating the Jello cups his great grandma buys for a special treat for him each week. I've suggested fruit cups and she does get those sometimes. I've used agar instead of gelatin in his Dari Free ice cream before and that worked well. Still trying to make sure that I am avoiding hidden sources of meat, especially gelatin now that I know how it is made- yuck! Thanks again for the ideas. I am slowly going through the archives and I already see a lot of good recipes to try. Even though each food allergy my kids develop is a challenge, I can look back and see how it has forced us to slowly change our terrible way of eating and we are more the healthful for it. So I consider their allergies to be blessings in disguise and even if they outgrow every one (which is my hope), we will all have healthier habits ingrained in us that will benefit us down the road.
