Although i'd like to live on gluten-free tofu burgers with spirulina sauce or something, i end up making lentil soup day in and day out or having pancakes. Any ideas for vegan, gluten free tasty things for the financially challenged? Thanks everyone. I like to make stir fries (using frozen veggies because they are cheaper right now) and serve them with rice noodles. Or with a white sauce made from coconut milk, or with a canned tomato sauce made by simmering canned tomatoes with onions and other cheap roots. Believe me, I understand about budget limitations. We've got 8 in our family and I'm a stay at home mom married to a school teacher. No big bucks here :-) I make stew a lot.w/ potatoes, onion and celery for a base and whatever else is leftover. Sometimes w/ lentils, sometimes not. Potatoes.a lot of taters:-) I make a nutritional yeast gravy for them and add veggies for toppers. " Pizzas " .a slice of gluten free bread, spread w/ spaghetti sauce and topped w/ whatever veggies I have and a slice or two of tofutti cheese. I use TVP a lot as well, into " meat " loaves, spaghetti sauce..etc. Tacos w/ refried beans and whatever else you like in them. That's off the top of my head, hope something helped.
